Spicy Bangers Recipe

Ingredients 

  • 1 tablespoon olive oil
  • 8 pork sausages
  • 1 small brown onion, thinly sliced
  • 1 red capsicum, chopped
  • 1 large zucchini, chopped
  • 1 garlic clove, crushed
  • 1 tablespoon tomato paste
  • 400g can diced tomatoes
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon worcester sauce


Method 

  1. Heat 1/2 the oil in a large heavy-based saucepan over medium-high heat. Cook sausages, t until browned. Transfer to a plate.
  2. Heat remaining oil in pan. Add onion. Cook, stirring, for 5 minutes or until softened.
  3. Add capsicum, zucchini and garlic. Cook, stirring, for 3 to 4 minutes or until vegetables are lightly browned.
  4. Add tomato paste, tomatoes, worchester sauce, paprika and 1/2 cup water. Bring to the boil. Reduce heat to low.
  5. Cut sausages into thirds. Return to pan.
  6. Simmer, uncovered, for 5 to 7 minutes or until sausages are cooked through.
  7. Serve with mashed potatoes
