Ingredients
- 1 tablespoon olive oil
- 8 pork sausages
- 1 small brown onion, thinly sliced
- 1 red capsicum, chopped
- 1 large zucchini, chopped
- 1 garlic clove, crushed
- 1 tablespoon tomato paste
- 400g can diced tomatoes
- 1/2 teaspoon smoked paprika
- 1 tablespoon worcester sauce
Method
- Heat 1/2 the oil in a large heavy-based saucepan over medium-high heat. Cook sausages, t until browned. Transfer to a plate.
- Heat remaining oil in pan. Add onion. Cook, stirring, for 5 minutes or until softened.
- Add capsicum, zucchini and garlic. Cook, stirring, for 3 to 4 minutes or until vegetables are lightly browned.
- Add tomato paste, tomatoes, worchester sauce, paprika and 1/2 cup water. Bring to the boil. Reduce heat to low.
- Cut sausages into thirds. Return to pan.
- Simmer, uncovered, for 5 to 7 minutes or until sausages are cooked through.
