Ingredients

2 cup grated pumpkin

1 cup grated carrot

2 spring onion, sliced

4 eggs

1/2cup wholemeal flour

2 tsp baking powder

2 cup chopped cooked mussel meat (2kg whole raw mussels)

2 tbsp oil
Method:

Mix together the spring onions, grated carrot, grated pumpkin, eggs, flour and baking powder until well combined

Mix through chopped mussels

Heat oil in a large frying pan over a medium heat

Place tablespoons of mixture into the pan

Cook until done
