NZ-Based Chicken, Potato, and Broccoli Meal Prep

Ingredients

  • 1 kg Agria potatoes
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 3 Tbsp cooking oil, divided
  • 1/2 tsp salt, divided
  • 1/4 tsp pepper
  • 450 g broccoli florets
  • 450 g boneless, skinless chicken breast
  • 1 Tbsp garlic herb seasoning

Instructions

  1. Preheat the Oven
    • Preheat your oven to 200ºC.
  2. Prepare the Potatoes
    • Dice potatoes into 2 cm pieces.
    • Mix Parmesan, garlic powder, paprika, and 1/4 tsp salt.
    • Toss potatoes with 1 Tbsp oil and Parmesan mixture.
    • Spread on a baking sheet and roast for 30 minutes, stirring halfway.
  3. Prepare the Broccoli
    • Toss broccoli with 1 Tbsp oil, 1/4 tsp salt, and pepper.
    • Spread on a baking sheet and roast for 20 minutes, stirring halfway.
  4. Cook the Chicken
    • Fillet chicken breasts into thinner pieces.
    • Season with garlic herb seasoning.
    • Heat 1 Tbsp oil in a skillet over medium heat.
    • Cook chicken for 5-6 minutes per side until cooked through.
    • Let rest, then slice into strips.
  5. Assemble the Meal Prep
    • Divide potatoes, broccoli, and chicken into four containers.
    • Refrigerate until ready to eat.
