Easy and Delicious Taco Bowls: Perfect for a Weeknight Dinner or Meal Prep

Ingredients:

  • 500g ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 avocado, diced
  • 1/2 cup shredded cheese (optional)
  • Salsa

Instructions:

  1. Cook the ground meat in a pan, adding taco seasoning and a splash of water as directed on the packet.
  2. In meal prep containers, layer rice, taco meat, black beans, corn, avocado, and shredded cheese.
  3. Serve with a side of salsa or store in containers for 3-4 days.
    You can also serve with tortilla chips for added crunch!
